Summer baking: peach and strawberry crumble

I had a couple of leftover peaches from the market that really needed to be eaten and decided to use them for a delicious and spontaneous dessert!

I love to eat the crumble when it’s still hot from the oven and a scoop of ice cream would be a perfect addition!

Ingredients

- 2 peaches + 6-8 strawberries (the fruit should snuggly fit into your baking dish)

- tablespoon of brown sugar

- 50g oatmeal

- 65g flour

- 1 packet vanilla sugar (about 5g)

- 1 teaspoon cinnamon

- 55g soft butter

 

Instructions

- Preheat oven to 180°C 

- Cut the fruit into middlesized pieces

- Fill the baking dish evenly with the fruit

- Add a tablespoon of brown sugar and mix with the fruit

- In a separate bowl mix together: oatmeal + flour + vanilla sugar + cinnamon + butter

- Mix to form a crumbly dough (breadcrumb texture or even resembling wet sand)

- Spread evenly over the fruit in the baking dish

- Bake in the oven for ca. 25min (or until golden brown)

- Delicious when served still warm!
