Cozy evening baking: jammy biscuits

Gepubliceerd op 13 januari 2024 om 14:42

Yesterday evening I baked jammy biscuits. The recipe is incredibly easy and I love their golden crackled look with red heart. I fill (or rather overload) them with strawberry jam, which is my favourite but you can use any kind you like!

The recipe (for 8 biscuits):

1. Preheat the oven 190°C

2. Mix into a blender:

100 g of flour

50g butter

50g caster sugar

1 teaspoon baking powder

Mix until you have a breadcrumb consistency

3. In a small bowl whisk one egg and add table spoon by table spoon to the mixture until you have a soft dough. I added about half of an egg.

4. Roll the dough on a floured surface into a tube

5. Cut the dough tube into 8 pieces of about 2cm thickness and put them on a baking tray lined with baking paper

6. With the end of a coffee spoon make a hole into each biscuit

7. Fill that hole with jam

8. Bake in the oven for 15min or until goldenbrown

Enjoy!
